Monday's Mouthful O'Joy - Oven Baked Italian Chicken

I was experimenting the other day and came up with this recipe. I am not sure that I am the first one to ever come up with such a recipe, but I am sure that it was super yummy.

Pre-heat your oven at 375*.  Marinate your chicken breasts in Lite Italian Dressing for 30 min - or skip this step if you are in a hurry. No judgments here.

Set your raw chicken breast on an appropriate size piece of foil. And lightly poke with a fork (if you didn't do this prior to marinating).

Add the veggies that you like best. Note: if you put onion down first, it tends to grip the chicken really well and then you can wedge your other veggies in between and on top. See how cute it looks?!

Add fresh Italian dressing. I don't like to reuse the marinade, but that's just me.

Fold the foil so the goodies don't fall out and pop into the oven for about 40 minutes.  I make sure that each piece is 175* before pronouncing them "done."   It may take a bit longer if you have chicken breasts that are on the large side.  I also like to put them on a foil-lined cookie sheet b/c I tend to poke through the chicken breasts and the foil, so the dressing leaks out some.

Like I said, they are yummy.  I told The Affectionate One that they were "Yum-to-the E."  Her reply was, "Not-to-the-Me!"  Turns out she loved it too.  See, Mommy knows a thing or two, after all . . .
