Monday's Mouthful O' Joy

When thinking what to fix for dessert "quick" and "easy" are two big considerations for me. I am guessing they are for you too. Granted, there are times when an elaborate dessert is necessary and worth having to clean flour from every crack and crevice of your kitchen.

But for most occasions quick and easy is good. Very good. That's where today's recipe comes in. And chances are, you already have each ingredient in your pantry or fridge. Bonus!

Cherry Crunch

1 pkg white cake mix (yellow works too)
1 21 oz can cherry pie filling
1 tsp. lemon juice
1/2 cup chopped nuts
1/2 cup butter (I know, I know, but it's worth it)

Preheat oven to 350*. Spread filling in bottom of 9" square pan. Sprinkle w/lemon juice. Combine dry cake mix, nuts, and melted butter until crumbly. Sprinkle over pie filling. Bake 40-50 minutes or until golden brown. Serve alone or with ice cream or whipped cream.

And there you have it. Easy. Quick prep. And definitely tasty.
